Speaking of Eric Clapton one of his most famous covers is when he does the JJ Cale song "After Midnight". If you haven't heard Clapton do it look it up immediately. If you have yet to hear the original by the amazing JJ I'm posting it below.
This is his performance from 1971 and it is just great.
